Bacon Wrapped Chicken Breasts

Bacon has such wonderful abilities to flavor things. Take some and wrap it around chicken and then cover it with a great sauce over beef? Sound delicious to me.

This recipe is easy to make. I call it Barnyard Delight because of the three meats used. Served with a salad it makes a simple and complete meal.

Barnyard Delight

6 ounces of chipped beef

16 strips of bacon

1 can cream of mushroom soup

8 chicken breasts

1 cup of sour cream

1/4 cup of water

1 tablespoon of vinegar

Step 1 - Preheat oven to 375 degrees Fahrenheit.

Step 2 - Grease a 9x13 pan with Pam spray or the like.

Step 3 - Line the bottom of the pan with chipped beef

Step 4 - Take two strips of bacon per chicken breast and wrap them around each one.

Step 5 - Lay the breasts on top of the chipped beef with even spacing between them.

Step 6 - Combine the sour cream, soup, water, and vinegar in a separate bowl. Pour it over the chicken breasts.

Step 7 - Cover the pan with aluminum foil. Cook for one hour. For the final fifteen minutes uncover it.

That's it. Let it cool for just a bit and then serve. Be sure to serve it with the sauce-like mixture. Enjoy!

Stir and then add the boneless skinless chicken breast halves. Spoon some of the liquid over the meat. Cook until done. Remove from saucepan heat. Allow the mixture to slightly cool. Season the mixture with the salt, paprika, and hot pepper sauce. Remove meat from the saucepan and then cut it up into pieces of about ¼ to ½ inch squares. Set aside until needed.

Slowly add the hot chicken broth into the eggs and whisk continually. Stirring until the mixture begins to thicken slightly.

Add the envelope unflavored gelatin mix to the ¼ cup water and allow it to stand to soak for about 5 minutes. Microwave the water and gelatin for 60 seconds. Remove from microwave and stir to dissolve the unflavored gelatin mix. Stir this mixture into the chicken broth mixture.

Whip the heavy cream until forming stiff peaks and then fold into the chicken mixture.

Dip a mold ring into some cold water and then shake out the excess water, but do not dry the mold with a towel. Pour the chicken mousse mixture into the mold ring. Place in the refrigerator overnight to chill and set.

Run a clean butter knife along the edges of the mold and then dip the mold in some hot water for several seconds. Invert the ring mold onto a bed of lettuce leaves on a serving platter.

Use the cooked early green peas and cooked cubed new potatoes or other fresh and or cooked vegetables to decorate around the bottom and top of the molded creamy chicken mousse salad.

To your stir-fry wok or a large heavy skillet or saucepan over a high heat setting, you will add 2 tablespoons vegetable oil to heat. Add the chicken slices and then stir-fry until the meat is firm and white.

Sour Cream Mushroom Chicken

A lot of families are turning to chicken these days, for a number of reasons. It is more affordable than beef, it cooks faster, it is easier to digest, and it is incredibly versatile. The following recipe is quite rich, but can be slimmed down by using low fat buttermilk and butter.

What You Need:

8 skinless, boneless chicken breasts 8 oz fresh sliced mushrooms 16 oz sour cream 4 tablespoons butter 2 cups buttermilk 2 tablespoons salt 2 tablespoons pepper 2 teaspoons garlic powder 1 cup flour 4 tablespoons vegetable oil

How To Make It:

Place chicken in plastic, lidded container and cover with buttermilk. Let sit for 12-24 hours. Drain chicken in colander.

Preheat the oven to 350 F.

Start heating vegetable oil in a large frying pan.

Combine salt, pepper, and garlic powder. Liberally apply to chicken before dredging in flour.

Fry the chicken breasts until they are golden brown, then place them in a 9 x 13 pan.

Simultaneously, fry the mushrooms in butter.

Place the mushrooms on top of the chicken, and cover the dish with tinfoil.

Cook for 30 minutes, and remove the tinfoil. Add the sour cream, and return the dish to the oven, uncovered. Cook for an additional ten minutes.

Remove from oven, and leave to set for 5 minutes.

Serve with garlic mashed potatoes and your choice of vegetable.

Garlic Mashed Potatoes

What You Need:

1 roasted medium head garlic 2 pounds russet potatoes, peeled (or not) and quartered 4 tablespoons softened butter ½ cup milk

How To Make It:

If roasting garlic is something you have not done before, simply remove the white outer wrapping of the clove, leaving the cloves attached to the root. Cut a little off the top, then cover in olive oil and wrap in tinfoil. Bake in a preheated 400° oven for 30-35 minutes. Upon removal, cool the garlic until you can handle it without burning yourself. Squeeze the base of the cloves, and they will pop out of the bulb.

While the garlic is roasting (this is going to smell so heavenly), bring a large pot of water to a boil. Add the potatoes and cook until tender, roughly 15 minutes. Less, if you prefer your mashed potatoes to have a bit of consistency to them (but only by a minute or two). Once the potatoes have been drained and cooled, chop them to roughly 1" cubes.

Return the potatoes to the pot, and add butter and milk. Most recipes advise salt and pepper as well, but seasoning is a personal taste which is also dependent on what the potatoes will be served with.

Cut the garlic in half and squeeze into the potatoes. Use a hand mixer to bring the potatoes to desired consistency.

How To Make It

Easy Chicken Cordon Bleu

Delicious, and easy-to-make, this simplified version of the classic French dish is fun to make, visually pleasing and a joy to eat. Chicken breasts are flattened and topped with Swiss cheese and ham. The breasts are tucked in over the ham and cheese and secured. The chicken is browned and then sauteed over low heat in dry white wine and chicken broth. A sauce is created using the reduced wine with a cornstarch and heavy cream thickening mixture. When the sauce has heated through and reached the desired consistency, it is poured over the cooked chicken and the dish is served.

The best choice for this dish are fresh, moist, plump chicken breasts. The flattened chicken, if done properly with a larger piece, will nicely fold back over the ham and cheese and form a nice, tight cocoon. Preparation:

1. Chicken should be pounded flat with a meat mallet to a thickness of 1/4".
2. Place a Swiss cheese slice on each breast, leaving 1/2" edge exposed. Place a slice of ham on top of the cheese.
3. Fold the edges of the chicken breast over the ham and cheese and secure with toothpicks.
4. Combine flour and paprika in a shallow bowl.
5. Coat the chicken breasts in the flour mixture.
6. In a large saute pan, heat butter over medium high heat.
7. Cook chicken until brown, turn and cook chicken on other side.
8. Add dry white wine and chicken bouillon.
9. Reduce heat to low, cover saute pan and cook 30 minutes.
10. Transfer chicken to a warm serving platter, and remove toothpicks.
11. In a small bowl, combine the cornstarch with the whipping cream, stir slowly into the saute pan.
12. Simmer until sauce thickens, and spoon over chicken. Serve warm.
