The basic tools you will need for baking chicken include a roasting pan, sharp knife, meat thermometer, and of course, the oven. A few tablespoons of olive oil and simple seasonings like a few pinches of salt, black pepper, rosemary, oregano, and thyme are all you would need for creating an incredibly tasty baked chicken.

When using a whole chicken you will first need to remove the giblets and rinse the inside and the outside of the bird with cool water. Pat the chicken dry with paper towels and season with the herbs and spices of your choice.

After removing from the oven, allow the chicken to sit untouched and cool for about 10 minutes before carving with a sharp knife and enjoying.

Baked Lemon and Mushroom Chicken Recipe

What You Need

1 tablespoon extra virgin olive oil 4 boneless, skinless chicken breasts 2 lemons 1/2 stick butter 3 cups white mushrooms, chopped 1 teaspoon tarragon 2 tablespoons flour 2 cans chicken broth 1/2 teaspoon garlic Salt and freshly ground black pepper to taste

How to Make It

Preheat the oven to 350 degrees Fahrenheit.

Use the olive oil to coat the chicken breasts then squeeze the juice from 1 lemon evenly over top of each.

With the other lemon, cut into 8 thin slices and place 2 atop each chicken breast.

Bake the chicken for 40 minutes or until the juices run clear.

About 20 minutes before the chicken is done baking, melt the butter in a medium sized skillet and then add the chopped mushrooms with the tarragon. Lightly saute the mushrooms for about 5 minutes or until they are golden brown and tender.

Slowly stir the flour into the mushroom mixture then slowly add the chicken broth. Continue to stir while gradually increasing the heat and bringing the mixture to a gentle boil. Keep boiling gently for about 10 minutes or until the mixture thickens and turns into a creamy sauce.

Spoon the sauce over the baked lemon and mushroom chicken and serve immediately.
