Classic Chicken Dishes Stand the Test of Time

Most of the classic chicken dishes are tasty and easy to make. Of course, considering a recipe to be a classic depends a lot on personal taste and locality. For example, what is considered a classic in New York is not necessarily going to be one in the southern United States.

What makes a dish a classic? It has withstood the test of time. People have been enjoying it for decades, and maybe centuries. It goes by a name that most everyone is familiar with; one that invokes a picture and a feeling that makes the mouth salivate.

For instance, when someone says the words "chicken and dumplings," an image comes to mind immediately. Chicken and dumplings is a classic in the U.S. The image that the term provokes may include more than just that of the meal itself; it may include a thought of Grandma cooking in the kitchen, or good times you had with your family as a child around a warm fireplace.

The same thing goes for another classic chicken dish: fried chicken. Who is it that can go "back home" without having a wonderful fried chicken dinner? Don't forget the mashed potatoes and gravy.

Barbecued chicken is definitely a classic. But the question is, what kind of barbecue? It is cooked differently in different areas of the country. Some areas are big on sweet sauces; some on vinegar based sauces. There are even locales that use no sauce, and yet call it barbecue just because it is cooked on an outdoor grill. All of these people consider their brand of chicken to be classic. It is advisable not to argue with them about it until after you have finished eating their barbecue.

Probably the simplest of all classic chicken dishes is roasted chicken. That one is known worldwide. It meets all the criteria of a classic: It has been around as long as people and chickens have, it tastes great, and it is very simple to prepare. All you have to do is season it and bake it.

Does it meet all of our test criteria? No, but what it lacks in accountability, it makes up for in convenience.
